The Details

95% Sauvignon Blanc, 5% Chardonnay from organically cultivated vines around the Loire's offshoot, Cher Valley. Grapes are hand-harvested from 20 yera-old vines planted to clayey limestone soils and treated two ways upon arrival at the winery: partially destemmed and macerated for about half a day; partially directly pressed. Spontaneous fermentation in tank prior to aging sur lie also in stainless. Bottled unfined, coarsely filtered and minimal (<15ppm) added SO2.
