The Details
The rarely seen Natural Bordeaux from perhaps its greatest practitioner, Michel Théron in Arsac. This is Cabernet Sauvignon/Merlot/Petit Verdot. Grapes are hand-harvested and primarily destemmed with some whole-bunches thrown in to macerate altogether for 7-10 days in concrete tank. Slow, gentle pressing and spontaneous fermentation/élevage in a combination of concrete tank and various wooden vessels both neutral and new (barrique, 400L barrel, some foudre). 12-15 months élevage sur lie. Bottled unfined, unfiltered, minimal added SO2.
