The Details
The rarely seen Natural Bordeaux from perhaps its greatest practitioner, Michel Théron in Arsac. This is younger-vine Merlot (55%) / Cabernet Sauvignon (45%) that is primarily destemmed with some whole-bunch fruit that all co-macerate together for 7-10 days in concrete tank prior to gentle pressing. Spontaneous fermentation and élevage in concrete, neutral mixed wood (foudre, barrique, 400L barrel) & some new wood as well. 12-15 motn élevage. Bottled unfined, unfiltered, minimal added SO2.
