The Details

From the Roussillon in the deep south of France, this is biodynamically cultivated Grenache (60%) & Carignan (40%) planted to bush vines in calcareous clay soils. Grapes are hand-harvested and spontaneously ferment whole-cluster in a mix of fiberglass and stainless steel prior to pressing and an élevage of up to a year. Bottled unfined, unfiltered, no additional SO2.
