The Details

85% Nerello Mascalese, 15% Nerello Cappuccio, Carricante & Cataratto from Versante Nord on Mt. Etna at 550m elevation in the volcanic sandy soils of the volcano. Grapes are hand-harvested and macerate/spontaneously ferment for 2-3 days prior to pressing. Aged in stainless steel and neutral barrel before being bottled unfined, unfiltered, minimal (10ppm) added SO2.
