The Details

From organically cultivated vines in Cheverny, Loire. This is mainly Chardonnay with bits of Menu Pineau, Pinot Noir, & Cabernet Franc tossed in. Vines are a mixture of 15-80 years-old. Fruit is hand-harvested, directly pressed and spontaneously fermented and aged in neutral barrel for 7 years sur lie prior to bottling unfined, unfiltered, no dosage, minimal added SO2. Refermentation in bottle a la méthode champenoise.
