The Details

Biodynamically cultivated Gamay & Cabernet Sauvignon from 15-80 year-old vines planted in clay/limestone/gravelly soils. Grapes are hand-harvested, and macerate for a short period of time prior to pressing. Spontaneous fermentation and aging in neutral barrel for 24 months prior to refermentation in bottle, further aging and disgorgement. Bottled unfined, unfiltered, minimal added SO2. No dosage.
