The Details

100% Aligote from 50 year-old vines on western exposed clay/limestone soils in Bouzeron. Grapes are hand-harvested, slowly, directly pressed with the must left to settle. Spontaneous fermentation in fiberglass tank before racking to neutral barrel for 10 month élevage. Bottled unfined, unfiltered, no additional SO2.
