The Details
This is a supremely aromatic and elegant, champagne-method sparkler from the expert Domaine Buronfosse working in La Combe-de-Rotalier in Southern Jura, France.
Vinification: A blend of Chardonnay and Savagnin hand-harvested from 70 year-old vines grown in clay and limestone soils. The grapes undergo spontaneous fermentation (ambient yeasts; no temp. control) in stainless steel and is aged according to traditional méthode champenoise. Unfined, unfiltered, no additional SO2.
