This is peak Chardonnay, hazelnut and chestnut with edge and citric verve (bone-dry, to boot) from Domaine Buronfosse who work in La Combe-de-Rotalier in Southern Jura, France
Vinification: 100% Chardonnay hand-harvested from 10 year-old vines grown in clay and limestone soils. The vines are farmed biodynamically. The grapes are gently directly-pressed and undergo spontaneous fermentation (ambient yeasts; no temp. control) in neutral oak before an 18-month élevage also in neutral oak, with topping-up that helps contribute to a ouillé-style maturation. Bottled unfined, unfiltered, with no additional SO2.
