This is a beautiful and heady red wine from Domaine Chevrot whose estate encompasses twenty hectares of vines in Maranges, the southern entrance to Burgundy's Côte de Beaune.
Tasting Notes: A haunting Burgundy. There is deep purpling on the nose where minerality swirls into a helix with candied rhubarb and dark-skinned forest fruit. The palate is one to savor: dense yet open-armed. A truly delicious and singular wine.
Vinification: 100% Pinot Noir from 54 year old vines in their Santenay 1er Cru vineyard site. The soil is clay silt. Further vinification details: Manual harvesting. Alcoholic fermentation: 15 days of vatting - only punched (5 total) - 15 to 34 ° C. Malolactic fermentation. Ageing: 15 months French oak barrels of 228 l - 3 rackings -30% new oak barrels.
