The Details

100% Chardonnay from the Valais in the Swiss Alps. Grapes are hand-harvested from biodynamically cultivated vines, and whole-bunch directly pressed in an old horizontal screw press which necessarily macerates decreasing portions of the juice/grapes over 12 hours. Spontaneous fermentation and aging sur lie in stainless steel vat before being bottled unfined, unfiltered, no additional SO2.
