The Details

100% Melon de Bourgogne from a windy, south-facing slope in Monnières (Cru Muscadet). Grapes are hand-harvested from biodynamically cultivated 20-70 year-old vines planted in amphibolite & gneiss soils. Whole-bunch directly pressed to stainless steel tank. Spontaneously fermented and aged thereafter sur lie in underground, glass-lined cement tanks for 9 months prior to bottling unfined, coarsely filtered, minimal added SO2.
