The Details
The Briords old-vine bottling from Pépière is 100% Melon de Bourgogne from biodynamically cultivated vines aged 60-70 years-old on a slope above the peaceably flowing Maine. Bedrock is granitic with bits of clay/sand/gravel in the topsoil. Grapes are hand-harvested, directly pressed and the juice naturally settles over 12 hours. Spontaneous fermentation in stainless steel tank prior to aging sur lie for up to 9 months in glass-lined cement vat. Bottled unfined, unfiltered, minimal added SO2.
