The Details
100% Macabeu from 75+ year-old vines organically cultivated on the highlands above the ancient Roussillon village of Calce. Grapes are hand-harvested (early) and directly pressed to tank where the juice spontaneously ferments and wine ages thereafter sur lie for 10 months before bottling unfined, unfiltered, minimal (<15ppm) added SO2.
