The Details

100% Sauvignon Blanc from organically cultivated in the lieu-dit Hauts Baigneux across the forest from Chinon in the mid Loire Valley. Grapes are hand-harvested over the course of multiple passes (various ripeness) from the vines planted to clay/limestone soils. Directly pressed and spontaneously fermented in stainless steel tank prior to élevage sur lie in both neutral barrel and stainless steel tank prior to bottling unfined, unfiltered, minimal added SO2.
