The Details
100% organically cultivated Cabernet Franc from 60+ year-old vines in Cheillé, just across the forest from Chinon in the mid-Loire Valley. Grapes are planted in clay/silex soils on the mid-slope of the lieu-dit's hillside. Hand-harvested at full maturity, grapes undergo 9-day maceration in stainless steel tank. Spontaneous fermentation and maturation also in stainless steel tank. Bottled unfined, coarsely filtered, no additional SO2.
