The Details
From biodynamically cultivated vines in the Roussillon, this is 55% Maccabeu, 25% Grenache Blanc, 20% Muscat à Petits Grains. Grapes are all roughly 40 years-old and farmed on a variety of soils across 3 parcels. Clay/limestone/schist. Maccabeu/Grenache Blanc are hand-harvested together and whole-bunch spontaneously co-ferment for 7 days in fiberglass prior to pressing. Muscat à Petits Grains are hand-harvested and 15-day whole-bunch spontaneously ferment for 15 days prior in fiberglass to pressing. Blended, the wine ages for 5 months in fiberglass tank prior to bottling unfined, unfiltered, minimal (<20ppm) added SO2.
