The Details
100% Aligoté biodynamically cultivated in the Les Peteurs plot. 35+year-old vines planted to clay/limestone soils. Grapes are hand-harvested, slowly pressed, and spontaneously fermented in fiberglass tank before maturation also in tank for 7 months. Bottled unfined, unfiltered, no additional SO2.
