The Details
Négoce from Didon. 100% Pinot Noir from organically cultivated, very old-vines in both Victoriasberg, Dieffenthal (Alsace) & Juliénas (Beaujolais). Grapes are hand-harvested, driven back to Burgundy where they whole-cluster spontaneously ferment prior to maturation in fiberglass tank for 9 months. Bottled unfined, unfiltered, no additional SO2.
