The Details
100% Pinot Blanc from 25+ year-old vines biodynamically cultivated in Alsace. Grapes are slowly, directly pressed in whole-bunches. Juice spontaneously ferments in neutral demi-muid and stainless steel tank prior to élevage in a combination of vessels for 38 months. Bottled unfined, unfiltered, no additional SO2.
