About the wine
Blanc des Noirs Alsatian Crémant. 100% biodynamically cultivated Pinot Noir from Alsace, vines are 50-60 years old. Grapes are hand-harvested and directly, slowly pressed into stainless steel tank where spontaneous fermentation is followed by maturation for a year sur lie. The next vintages Pinot Noir must is added to re-kick-start fermentation in bottle a la zero dosage traditional method. 24 months on the fine lees in bottle prior to disgorgement, topped off with bits of wine from other disgorged bottles of the same vintage. Unfined, unfiltered, zero dosage, no added SO2.
