The Details
Vinification: 100 % Grenache Noir hand-harvested from plots with varying primary soils; one schist, one marl, one granite. The grapes from each parcel undergo spontaneous fermentation in separate concrete tanks before being raised in neutral oak through the winter. The wines are thereafter blended in the spring. Unfined, unfiltered, no additional SO2. 13.5% ABV
