The Details
100+ year-old vines of Chardonnay planted in the lieu dit La Combe Bazin. The oldest vines Rougeot farms. "The sleeper hit" of Rougeot's range!
Hand-harvested, directly pressed, and cold-settled over 2 days. Spontaneous fermentation takes place in neutral barrel. Élevage takes place over 18 months in new oak barrels (15%) and 1 to 4-year-old barrels (85%) without lees stirring. The wine is then racked into steel tank for blending and resting being bottled unfined, unfiltered, minimal added SO2.
