The Details
100% old-vine Aligoté organically farmed across the Route Nationale from Chassagne-Montrachet, planted to alluvial white marly limestone soils. Grapes are hand-harvested, foot-crushed, and a portion macerate with the skins for several hours before a basket pressing and drainage to ole neutral large barrels for spontaneous fermentation and a year in neutral barrel and a further 7 months thereafter in stainless steel. Bottled unfined, coarsely filtered, minimal (10ppm) added SO2.
