The Details
50/50 Bical and Cercial, from 25 year old vines planted on chalky-clay soils within a site called Óis do Bairro. De-stemmed and fermented in barrels for three weeks with no temperature control. The wine is aged for seven year on lees in the bottle, with 2g of dosage added after disgorgement. No fining or filtration. Vin jaune, oloroso sherry, solera champagne....and Duckman. Curry spice runs up and down the spine of this extraordinary wine, which is bursting out of its cage with nuttiness. The palate has banana peppers and RedVine licorice, but also so much salty caramel and miraculous acidity. Party showstopper.
