The Details
94% Fern√£o Pires and 6% Baga, from 25-year-old vines grown on chalky and sandy soils. The grapes are de-stemmed, spend three hours on the skins and co-fermented spontaneously for three weeks with no temperature control. The wine is then aged in 600L casks for six months. Tasted blind, you may think you were drinking aged Barbaresco: the nose is rich tobacco and rose petals caught in the rain, with an underlying lumberjack's musk. The palate is black licorice and a touch of cardamom, wrapped in black cherry and cassis fruit. Sharp acidity at the finish keeps the wine feeling fresh after its weighty debut. Drink with carne asada tacos, or chicken mole.
