The Details

Biodynamic Loire Red from Saumur/Puy-de-Notre-Dame. 60% Cabernet Franc, 40% Pineau d'Aunis. Grapes are hand-harvested and spontaneously ferment separately. Pineau d'Aunis macerates for 2 days prior to pressing whereas the Cab Franc macerates for 22 days. Blended and matured in tank for 5 months prior to bottling unfined, unfiltered, minimal to no additional SO2 depending on the vintage.
