The Details
68-year old bush vine Xarel-lo biodynamically cultivated in the "Nun" vineyard, the fruit is directly pressed and spontaneously barrel fermented in a combination of new and used French oak barrel. Élevage follows fermentation in teh same barrels for about 8 months prior to bottling. Unfined, unfiltered, minimal SO2 at bottling.
