The Details
100% biodynamically cultivated single-vineyard old-vine Xarel-lo from perhaps its greatest custodian in this more classic style, Enric Soler. Grapes are hand-harvested, directly pressed to 2 year-old (75%) and new (25%) oak barrels from a couple of the more renowned cooperages in Burgundy. Spontaneous fermentation and aging for 9 months sur lie in these barrels before blending and bottling unfined, unfiltered, minimal added SO2 (SO2 is added at both crush and bottling for Enric). 12.5% ABV
