The Details
100% old-vine Verdejo from four different sites in Santiuste de San Juan Bautista in the Rueda. Grapes are hand-harvested, directly pressed to a combination of stainless steel tank (70%) and 500L Spanish dolia (amphora) (30%). Spontaneous fermentation and aging for 9 months before being bottled unfined, unfiltered, no additional SO2.
