The Details
A very rare bottling I’ve never had – tipped off by the name, this is from a parcel of oft forgotten Champenoise varieties – Pinot Blanc, Petit Meslier, and Arbane
Champagne a l’ancienne – the vines here are young (planted by Étienne in 2010). The vineyard, called Les Fours, can be found on a south facing sandy/chalky promontory in the town of Montgenost in the Côte de Sézanne. Grapes are organically cultivated, hand-harvested and all whole-bunch pressed together. Settled in stainless and racked to 600L barrel. Spontaneous fermentation and aging sur lie for 7 months before transfer to bottle. Aged under cork in bottle rather than crown-cap (touch more oxidation) for 24-30 months before each bottle is hand-disgorged. Unfined, unfiltered, no additional dosage.
