Blanc des Noirs -- Another rare bottling I’ve never had – the very, very infrequent and shy beast that is a 100% Pinot Noir vinified by a winemaker in the Côte des Blancs – an amalgam of styles
From a single parcel of Pinot Noir organically cultivated in Bligny called ‘Bligny’ (the creativity is left to the wine) in the Aube – high percentage of limestone in the south-facing vineyard. All from 2021, the wine is vinified entirely in neutral barrel and aged under cork (a theme) rather than crown-cap for 38 months before disgorgement this past January.
