From western Sicily, near Salemi - an hour-ish jaunt from Marsala - Fabio Ferracane serves up a delightful and well-executed Cataratto. His ~50-year-old family vines are hand-harvested in early September, then given a mere 2 days of skin contact before pressing, followed by 7 months of maturation sur lie. Bottled unfined, unfiltered, and SO2-free.
