The Details
This is a sunny Blanquette de Limoux Brut Nature from Séverin Barioz who works four hectares of vines in the south of France.
Tasting Notes: Notes of honeycrisp apples are whisked away by a swift wind of overgrown grass. With a bright palate full of dry and creamy bubbles, this is an elegant, integrated, and distinct Blanquette.
Vinification: 90% Mauzac, 10% Chenin Blanc from 25 year old vines in Calce (Roussillon). This is a traditional method sparkler with rigorous technique. The grapes are separately direct-pressed in whole bunches before racking the juice off of its heavy lees. Once racked, the separate juices go through their first alcoholic fermentations. Now they are blended into what is known as Vin Clair. Dosage is added to kick-start secondary fermentation. The wines are then aged 18 months sur latte at Domaine Delmas in Limoux before disgorgement and final bottling.
