The Details
90% Vermentino, 5% Malvasia, 5% Trebbiano from a 30-50 year-old vineyard biodynamically farmed on sandy rocky volcanic soils in Monte Amiata. Grapes are hand-harvested, destemmed, and macerate for 2 weeks prior to pressing. Spontaneous fermentation in tank; 10 month élevage in acacia barrique. Unfined, unfiltered, minimal to no additional SO2 depending on vintage. 13.5% ABV
