The Details

100% organically cultivated Ardèchois Gamay négoce from Jean-Benoit Plagnol (same source of Gamay that Gilles Azzoni of Le Raisin et l'Ange works with). Grapes are hand-harvested, macerate for 10 days whole-cluster in resin tanks before pressing. Aging of ~9 months in vessel before bottling unfined, unfiltered, no additional SO2.
