The Details
From the Gard, this is 60% Grenache, 30% Cinsault, 10% Syrah from organically cultivated vines planted in clay/limestone soils. Grapes are hand-harvested and Cinsault/Grenache are directly pressed while the Syrah and some Grenache spontaneously ferments/macerates whole-bunch in the directly pressed juice. Pressed and aged in neutral vessel. Bottled unfined, unfiltered, no additional SO2.
