The Details
95% Zweigelt, 5% Cabernet Sauvignon. Short maceration prior to bottling at a specific (secret) brix. Unfined, unfiltered, minimal SO2 added prior to final bottling. 11.5% ABV
Founded in 2014 by Stefanie and Alwin Jurtschitsch and Martin and Anna Arndorfer producing exclusively pet-nat wine, "Fuchs und Hase" represents a distinct conceptual project focused on the cultivation of expert, what you would describe as near-perfect pét-nats. Dry but not kombucha-dry; fruit mixing with minerality a fine-enough bubble it's distinct from something more explosive, yet it does not masquerade as Champagne-method bubbles. Austrian beauty served up fizzy.
