The Details
From northern Lazio's volcanic soils, this is Procanico/Malvasia/Trebbiano from organically cultivated vines. Grapes are hand-harvested and macerate for 2 weeks prior to pressing. Spontaneous fermentation and aging in neutral barrel prior to bottling unfined, unfiltered, minimal (<15ppm) added SO2.
