The Details

This 100% Silvaner, the "Weiße Jura," is from Dolde's highest vineyards, in a parcel of Burgundian soil (limestone/clay). The fermentation and elevage is in stainless steel; the wine is unfined and bottled with a small amount of SO2. Unquestionably zippy and electric Silvaner, taut and high acid, but finishing with glou glou delights. A perfect pairing for moules frites or anything other salty-carbo combo.
