The Details

70% Sauvignon Blanc, 30% Chardonnay organically cultivated in Cheverny. Grapes are hand-harvested from 10-25 year-old vines planted to sandy silty soils. Directly pressed to stainless steel and concrete vat for spontaneous fermentation and aging. Bottled unfined, unfiltered, minimal (<10ppm) added SO2.
