The Details

60% Pinot Noir, 40% Gamay from organically cultivated young vines in Cheverny. Grapes are hand-harvested, and macerate 80% whole-cluster, 20% destemmed for 15-20 days in concrete vat. Pressed and spontaneously fermented and aged in a combination of concrete and tronconic wooden vat. Bottled unfined, unfiltered, minimal (10-15ppm) added SO2.
