The Details
100% biodynamically cultivated Cabernet Franc from a .5HA parcel of 9 year-old vines planted to hard blue-gray marl and clayey Toarcian limestone bedrock soils. Grapes are hand-harvested, destemmed and spontaneously ferment/macerate for 15 days in 50hL stainless steel tanks prior to pressing. Aged for 8 months in neutral 225L French oak and concrete egg before being bottled unfined, unfiltered, no additional SO2.
