The Details

100% Chenin Blanc from biodynamically farmed vines in Thouars in the Loire Valley. Young vines (6 years-old) on reddish clay / green schist soils. Grapes are hand-harvested, whole-cluster directly pressed to 30hL stainless steel tanks for 4 days prior to racking to 12Hl Tava clay amphorae and neutral 225L oak for 8 months. Bottled unfined, unfiltered, 10 additional ppm of SO2.
