The Details
Elios is 100% Alsatian Pinot Noir, with elevage in neutral oak. A lithe wine resting on a supple yet structured base. Lightly bubbly on opening from trapped CO2, let this wine rest for a moment before diving in to its refreshing profundity, with notes of leather, pepper, dark cherry, humus and a touch of earth. Enjoy this with a lovely roast beef, late-night dim sum, or tofu scramble with plenty of ginger.

Singular, electric wines, Jean-Marc's style is always present in his work, particularly his macerated whites and ethereal Pinot Noirs. Through prolonged maceration, Jean-Marc minimizes the risk of oxidation and defaults, thereby paving the way for zero sulfur beauties with breadth of flavor and longevity.
