100% Cab Franc, Méthode Ancestral. Grapes were hand-harvested and direct pressed into both fiberglass and stainless steel tank. The juice was fermented with wild yeasts and cold stabilized over the winter (no temp control). A week before bottling, frozen must is added to the wine for its second fermentation. Bottled unfined, unfiltered with no SO2.
