The Details

100% Grolleau from organically cultivated vines planted in the '80s in Anjou on black schistous soils. Grapes are hand-harvested, and shortly macerated and bled off (a la saignée from Rouge aux Levres). Disgorged the spring following harvest. Unfined, unfiltered, minimal added SO2.
