The Details
100% organically cultivated Grolleau on 45 year-old vines planted to black schist bedrock with calcium rich sandy topsoil. Potentially the oldest Grolleau vines in this area of the Loire with the excepetion of Clau de Nell. Grapes are hand-harvested and whole-cluster carbonically macerate for 2 weeks with no punchdowns prior to pressing. Spontaneous fermentation in tank prior to élevage in fiberglass vat. Unfined, unfiltered, minimal added SO2.
