The Details
From many different, ancient varieties of Gamay which include the red-fleshed Gamay Teinturier varieties up the Burgundian family tree. Vines are 30-80 years-old. Grapes are organically cultivated over clay/limestone soils and semi-carbonically macerate and spontaneously ferment prior to 18 month élevage in large tronconic wooden vats. Bottled unfined, unfiltered, no additional SO2. 13.5%ABV
